Roasting vegetables is a fantastic way to enhance their natural flavors and create a delicious side dish. Here are some vegetables that can be roasted in a similar way to asparagus:

Broccoli: Cut into florets, coat with olive oil and garlic, and roast until tender and slightly charred.

Cauliflower:  Cut into florets, drizzle with olive oil, season with spices, and roast until golden.

Zucchini: Slice into rounds or half-moons, coat with olive oil and herbs, and roast until soft.

Bell Peppers: Cut into strips, toss with olive oil and seasonings, and roast until they are sweet and tender.

Eggplant: Cut into cubes or slices, coat with olive oil, salt, and spices, and roast until creamy and golden.

Sweet Potatoes: Cut into cubes or wedges, toss with olive oil and your favorite spices, and roast until tender.
